We just go for the day, leave early and get home late, but this year we decided to do more. The 24th was spent at Bear Lake as the past, but the following two days were spent in St. George and Zions. We essentially went from one end of the state to the other. <br />

Bear lake was nice, we got some snorkeling in, played volleyball, and tried to jump on the floating Trampoline. We just had a general good time. </div>

We arrived home late on the 24th, and early the next day headed down to St. George. We made a stop before in a little town called Kanarraville to hike Kanarra Creek. I think this was the highlight of the trip for most. It is a short slot canyon that leads to three cool waterfalls. Crowded, but not overly.</div>

Day two in St. George we headed into Zions. There all but Mom and Hannah (who was not feeling well) made it out to the top of Angels landing. We followed that by a hike in the Narrows. </div>

Angel Landing! We all made it, any were surprised how young the kids were. Especially when our youngest at only 7 was passing much older people on the trail telling them how fun it was while they held tenaciously to the chain or tree. </div>

Going back, shivering and all, they kids were obsessed with floating in the water as much as possible. Dad may have sparked this interest. The camelbaks act as life jackets and blowing air into the reservoir only made them float better. </div>

Before heading home, we stopped at the pioneer town of Grafton (and the ending of a killer bike trail). We enjoyed perusing the cemetery and the old log cabins. Makes you thankful for what we have now. Those settlers were beyond tough. </div>

My children love getting out in the wild and had been begging to go snowshoeing all week. With nostril freezing temperatures for weeks, it had been too cold. last Saturday seemed perfect so with the three youngest in tow I headed up south fork in Provo canyon, a great place for snowshoeing with kids. </span></div>

Every member of the family was given a "passport" that needed to be stamped at each event. When the passport was full, they could redeem it for a free Utah lake Festival t-shirt. Sometimes it involves all the brothers and sisters with their children other years just a few. This year, Gavin brought down his two children and my father came along. The caves are located in a cool rock formation that stands separately from the surrounding area. We spent hours exploring the caves, climbing over rocks and trying to link caves together. </span></div><br />

It is always a little unnerving being close to cliff edges with children who fear nothing, but they love it. </span></div><br />

We searched for a place called the tunnel, which is a natural tunnel that goes 53 feet through the mountain, but could not find it, so we found ring arch instead. </span></div><br />

After hiking about 9 miles exploring and finding these new places, we spent the rest of the afternoon swimming in 50 degree weather (kids idea). We all swam, minus mom who sat in the hot tub. </span></div><br />

So off we went, in windy, semi-cold weather we reached the top in 45 minutes. They were a little nervous at first, especially after passing the "creepy" cabin, but relaxed as we hiked on. We were the only ones on the trail and just stayed long enough to see the arch (via flashlight) snap a few pictures and head back down. The canyon was beautiful and provided hours of fun for the children to explore, climb, jump and just mess around, and for the adults because it is a gorgeous area. In the past, every spring, we have camped there as a family. For the last many years we have missed this trip as a family. Then headed out for our last adventure which was to explore the rocks on lady finger point. This point is very important in the park's history as it was on the end of this point, after a short hike, when it was decided to make a park here on the island. Finally it was time to bid farewell so the children played sharks and minnows while I packed the van. </span></div><div align="center"><br />

Sure there is a visit from a mysterious leprechaun set on wreaking havoc, but other than that, some green waffles and other green items, non-eventful. </span></div><div align="center"><br />

I figured it would be the last day for a while that the trails would be dry with the storm coming. Clothes were quickly changed, break feast hastily eaten and off we went. You see, they wanted to find the treasure before Jack did. We followed the clues, which were not simple I might add, to Provo canyon. Eventually ending at the squaw peak road closure gate, so with map in hand we headed up the road. </span></div><div class="separator" style="clear: both; text-align: center;"><br />

As the snow melts and the temperatures warm the trails become muddy and sticky. Too sticky and muddy to ride. There are a few places however where we have usually found success, Price or Antelope Island state park. He is testing out flats for a while based on the experiences of many that using flats makes one a better rider. However, I would stay away in the summer. It likes in the middle of the island and offers gorgeous views of the surrounding area. For quite some time Sedona Arizona has been on our list, but the 8 hour drive was just farther than we wanted to drive...normally. However, when we had a free weekend and over the edge sports had just published some pictures with a brief story about their trip, we decided it was time. </span></div><div align="center"><br />
</div><div align="center"><span style="font-family: Trebuchet MS;">We left Utah at 5:00 Friday night and arrived home 5:30 a.m. Sunday morning. 17 hours driving, 12 hours biking. It was amazing!</span></div><div align="center"><br />
</div><div align="center"><span style="font-family: Trebuchet MS;">We arrived in Sedona around 1 a.m. and found our campsite out side of town, with no real map, we were going on the </span><span style="font-family: "Trebuchet MS", sans-serif;">details and explanation of the staff from Over The Edge, which luckily was accurate. We pitched a tent and were asleep by 2:30. We woke up at 6 and by seven were in the car ready for the first trail.</span><br />

It essentially winds around a small mountain, is somewhat technical in places but also flowy and fast in others, and the scenery was amazing. So I rode from Timpanogos park up racecourse to the "altar" (the pile of rocks in the first picture), Down crank to Beginning of Dragon's back then dropped into Johnson's Hole and back down to the parkway trail and my car, about 9 miles overall. Not long, but long for January 6th.</span></div><br />

Within two hours there is Price, The San Rafael Swell and Salt lake valley. Within 3-4 hourse lies the world famous Moab with all it has to offer and St. George/Hurricane with what some regard as the best trail in the United States, Gooseberry Mesa and it's twin, little Creek, among many other greats (Guacamole, Slickrock swamp, Grafton, Zen, etc). </span></div><div class="separator" style="clear: both; text-align: center;"><br />

The ride/hike in the snow up moore fun was a little tedious as the trail is steep, rocky and had about 4 inches of snow on it. Little known too most is it's twin; Little Creek Mesa.</div><div style="text-align: center;"><br />
</div><div style="text-align: center;">While similar in riding, many have suggested that Little Creek rivaled and even surpassed the riding to be had on Gooseberry. The trails are less marked, but for the adventurous in spirit that becomes and indeed is part of the allure that keeps them coming back. </div><div style="text-align: center;"><br />
</div><div style="text-align: center;">We had ridden Little Creek before, but I broke a rear hub after only a few miles. We went and bought a new rear hub and rim, but with daylight fading we were only able to get in 10 miles or so. We had heard rumor that there are many more miles of trail (actually up to forty according to over the edge sports in Hurricane) so we had to go back. </div><div style="text-align: center;"><br />

Every year we try to go as a family but this year kind of got away from us and it wasn't until late in September that we were able to get up there. And it’s been tormenting my soul for the past 10 years as I’ve tried recipe after recipe trying to duplicate the taste and texture I love. You can buy pre-packaged mixes, but they’re not quite the same as homemade. The problem is that there are several different methods to making these little balls of heaven. A lot of them involve lots of hard to find ingredients, and methods like heating a mixture on the stove, kneading a big messy dough, etc. When I was in Brazil, I learned how to make the most quick and easy version- an ultra fast liquid batter that you just poured into a muffin tin. It’s been driving me crazy that I couldn’t find my recipe or one that was like it. And then a few weeks ago something magical happened. My husband walked in after organizing some junk in the garage and asked me if I wanted a little pink notebook. I knew immediately what it was. It was bursting with little scraps of papers. Scraps of papers with recipe notes on them. I heard the hallelujah chorus. We ate Pao de Queijo about 25 minutes later. And it was heavenly.<br />
If you’ve never had this type of Brazilian cheese bread, it’s tricky to explain. It’s actually not “bread” at all- at least not like we’re used to here in the US. It’s almost more like the texture of a cream puff shell or popover, but with more substance on the inside. The outside is slightly crisp and browned and the inside is airy and chewy. If you’re not familiar with them at all then I want you to be fully informed so you don’t expect an actual yeast bread “roll”. If you do, then you’ll probably think these are super weird and gooey. They’re served at popular Brazilian restaurants, but honestly, while I adore those restaurants, I’ve yet to have a<em> really</em> good Pao de Queijo at any of them. So trust me when I tell you that if you like those (or any of the pre-packaged mixes), you will probably love these homemade ones. And if you know anyone who has ties to Brazil like I do, you are sure to melt their heart with these. Once you see how quick and easy they are you’ll be making them all the time!<br />
The best part is that I have 99% of the ingredients in my house pretty much at all times.<br />

It’s a really smooth, soft flour that feels much like cornstarch. It’s made from the ground roots of the cassava plant and it’s gluten free for those of you that care about that :)<br />

Here in Idaho I can always find them at Fred Meyer, near the health food/specialty foods isle. You can also find tapioca flour at Asian markets as it’s used in a lot of Asian cooking, and also at health food stores and places like Whole Foods where you can find a good selection of wheat flour alternatives. Definitely check the gluten free isle of well stocked store. If you live in an area with WINCO grocery stores, people are telling me you can find it in the bulk section (how did not know this?? Thank you readers!)<strong> You can’t substitute any other type of flour</strong>- the tapioca flour is key, so when you find a good place to buy it, stock up!<br />
Okay, ready for easy? You can prep these in about 60 seconds. Seriously. Put everything but the cheese in the blender and blend until smooth.<br />

I like to break it up a bit and mix it in, but not pulverize it. And you can be creative here. I like a mixture of Parmesan and sharp cheddar. It’s important to use cheese that has a stronger flavor because it’s really the only flavor you’re putting in there and if it’s too mild I’ve found the rolls turn out pretty bland. But play around with it and find your perfect mix. You can also add more or less cheese, it’s pretty flexible.<br />

I like to sprinkle a little more parmesan on top. Because I like to sprinkle a little parmesan on top of just about everything. I inherited that from my father, who puts parmesan on just about everything he makes. A little sprinkle of kosher salt is also yummy.<br />

<strong>Quick Brazilian Cheese Rolls {Pao de Queijo} – Gluten Free!</strong><br />
<em>Recipe by Our Best Bites</em><br />
1 large egg<br />
1/2 cup milk<br />
1/4 cup canola oil<br />
1 cup tapioca flour (sometimes labeled tapioca starch) <strong>no substitutions</strong><br />
1/2 tsp kosher salt<br />
1/4 C grated cheddar cheese* (preferably medium or sharp)<br />
1/4 C grated Parmesan cheese<br />
*<em>you can play around with the cheese. I’ve used Monterey Jack, low-moisture mozarella, swiss, and even gruyere in place of the cheddar. All great!</em><br />
Optional: extra cheese to sprinkle on top and any herbs/flavorings you’d like to add. Try rosemary and or garlic powder, my favorites!<br />
Preheat oven to 400 degrees. Place egg, milk, oil, tapioca flour, and salt in blender and blend until smooth. Add cheeses and pulse 2 times. Immediately pour batter into a mini muffin tin (if your muffin tin isn’t non-stick, spray lightly with non-stick spray first), filling each well about 3/4 full, or just slightly less. If desired (and I recommend), sprinkle a bit of parmesan cheese on top and/or a tiny sprinkle of kosher salt.<br />
Bake for 15-20 minutes until puffed and golden. Remove from oven and cool for a few minutes before removing rolls from pan. Serve warm. {Que Gostoso!} These actually don’t re-heat well so I recommend making and eating fresh.<br />
Yield: anywhere from 16-24 rolls, depending on how full you fill your muffin pan. I fill mine pretty full (a good 3/4 full) and I generally get about 16-18.<br />

If you’ve ever thought you needed a reason to eat pancakes, today is the day: <em>National Pancake Day</em>. Eat a short stack for breakfast, enjoy them for lunch, or make a dinner out a manhole-sized pancake… guilt free… because you’re merely celebrating their existence. How do you like your pancakes? Buttermilk? Sweet Potato? Whole Grain? Fruit topped? Whipped Cream? I don’t usually care for any of that fancy stuff, but I can tell with absolute certainty that over-cooked, crusty pancakes have no place in my world. I like my pancakes fluffy. And sometimes I like slices of banana cooked inside. A good dose of real maple syrup is what I prefer to drizzle on top. But recently I started dreaming about mixing cinnamon rolls and pancakes together… and this is what I came up with- my new favorite pancake: <span style="color: maroon;"><strong>Cinnamon Roll Pancakes</strong></span>.<br />

I have a wonderfully fluffy pancake batter that I like to use (recipe below) so I swirled a bit of cinnamon roll filling into the pancake.<br />

Prepare pancake batter: In a medium bowl, whisk together flour, baking powder and salt. Whisk in milk, oil and egg, just until batter is moistened (a few small lumps are fine).<br />
2. In a medium bowl, mix butter, brown sugar and cinnamon. Scoop the filling into a small zip baggie and set aside. You don't want this to remain super-liquidy. It's best if it becomes a consistency similar to toothpaste.<br />
3. In a medium, microwave-safe bowl- heat butter and cream cheese until melted. Whisk together until smooth; whisk in powdered sugar and vanilla extract; set aside.<br />
4. Heat large skillet over medium-low heat. Spray with nonstick spray. Scoop about 3/4 cup batter onto the skillet. Snip the corner of your baggie of filling and squeeze a spiral of the filling onto the top of the pancake. When bubbles begin to appear on the surface, flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter and keep in a warm oven until ready to serve.<br />
5. When ready to serve, spoon warmed glaze onto the top of each pancake.</div><h3>Tips:</h3><div class="extra">*Keep the heat low or your pancakes might cook up too quickly. Don't flip them until you see those bubbles starting to pop on top. Flip them with a wide spatula so you can grasp the whole thing without batter and filling dripping all over the place!<br />
*It's best if you pour the batter onto your skillet, wait a minute or so and then swirl the cinnamon onto the batter. That'll give it a chance to set a little before you add the swirl.<br />
*If your baggie of filling begins to get too thick, just pop it in the microwave for a few seconds to soften it up again. On that same note, it shouldn't be too runny. The consistency of soft toothpaste is perfect. If it's melty and runny, it will tend to run all over your pancakes. <span style="font-size: small;">The Highlight of the night, if you can call it that, or perhaps the most vivid memory was this; While riding up a small hill two sets of eyes came running over the hill towards me, they darted in the bushes then slunk back through the grass towards me. I was, well, very, very startled. Shortly after a very large animal came bounding over the hill behind them...I got off my bike very quickly. They turned out to be two dogs and a horse, followed soon after by a horseman. </span><br />
